Experimenting in the Kitchen

I’ve been enjoying trying out lots of different smoothie recipes lately.  My latest creation is a homemade mocha!

Mocha Smoothie
1 frozen banana
~1 c. almond milk
1 T. cocoa powder
1 packet
Starbucks Via instant coffee (I’ve been looking for a way to add a coffee flavor to my chocolate smoothies – this is it!)
2-3 ice cubes
Optional: sweetener
(I use ~1 T. agave nectar)

Sidenote: I am not a heavy coffee drinker.  I don’t brew it in the mornings regularly, but I enjoy an occasional cup – and I love mochas.  I’m not a huge fan of Starbucks for many reasons, but this instant coffee is awesome.  Instant flavor, easy to add, and extremely portable.

Loving it!  I’m sure there will be pictures posted in the future.  The reason I don’t have one for today is because I didn’t make this smoothie this morning.

No frozen bananas this morning.  😥  So….I looked around to see what I could find.  Remember when I raved about opening my young Thai coconuts?  Well, I saved the coconut meat in the freezer.  And I thought I’d try a coconut mocha smoothie.  What could go wrong, right?

Into the blender went the frozen coconut, almond milk, cocoa powder, coffee mix, and agave.

Out of the blender came an oddly textured, coffee flavored, slightly gelatinous coconut tapioca pudding.  Yuck.  I got about half of it down (cause I was hungry!  I’m a breakfast girl) and threw the rest out.  Lesson learned.  I won’t be trying this again.  Maybe if I had a Vita-Mix it would have gone better…. *sigh*  A girl can dream.

But you never know unless you try.

At work I got a 3 cheese sandwich and cranberry kombucha from Bloomingfoods to wash the taste out of my mouth and memory.  Sadly, there were no dragon tofu sandwiches like the one I had the other day.

I went with a friend to 10th Street Market to pick up some zaatar.  Unfortunately they were out so I’ll have to go back another time.  I did pick up some pita, nori sushi sheets and a bamboo sushi mat for cheapo, though!  I’m excited to try making some vegetarian sushi for lunches.  I love sushi, but it can be so expensive.

After I got home I was so exhausted for some reason.  I took a short nap, and woke up hungry.

1 piece of pita (they’re large but thin with pockets) cut in half.  Half I spread with garlic/roasted red pepper hummus and sliced cherry tomatoes.  The other half I spread with almond butter and blackberry jam (yum!) and 1/2 a sliced banana.  Extra hummus on the side.

Almond butter + blackberry jam is great!  I can’t wait to have this again.

I’ve been a little bored today.  I should probably get up and do laundry and clean, but hmmm.  No motivation.  Not a drop.  We’ll see what I can manage to get done before I have to go to bed.  Work will come early tomorrow.

Recap!

Sorry I’ve been MIA for a while.  Life has run away with me.  This post will probably be a little long, because I’m just going to post the random pics of food I’ve had and whatnot.  So, let’s recap – in the past week I’ve:

1. Eaten food
2. Taken (some) pictures of said food
3. GRADUATED from college!!

Shocking, I know.  😀  I’m very happy to be done, but also kind of freaked out because I don’t really know what I’m going to do next.

Anyway, onto food and other things!

I’ve been eating a lot of the same things lately – which is what I tend to do when I find something I like.  So featured in my kicks lately – bread, tomatoes, hummus, basil, mangoes.  Examples (food pics!):

Good bread (read: crunchy!), tomatoes w/salt & pepper, tabouli, croutons & basil yum!  And don’t worry – I didn’t have any of that tasty nail polish remover.  😉

I also made a fantastice peanut sauce, which will probably get its own post.  Definitely going to repeat that recipe.

I also went out with friends the Friday before graduation and we had a few drinks at The Vid.  I wanted to share this pic, just cause it was unexpected and funny.  🙂

Peppermint & Lizards

Lately I’ve been waking up feeling slightly nauseated and not hungry, which is very weird for me.  I’m usually a Breakfast girl, ready to eat as soon as I get up.

Yesterday I got up and made a morning smoothie of 1 banana, ~1 cup chocolate hemp milk, a handful of blackberries, and ~1.5 cups baby spinach.  Usually I would love this, but for some reason I was not feeling it.  Disappointing.  And of course I forgot to take a picture.

It’s finals week, and I ran so many errands yesterday that when I did realize I was hungry, I was hungry.  I got a Jimmy John’s vegeterian sub, and there was a new girl who put some kind of oil sauce on my sandwich that should not go on the vegetarian (I think it was meant for a sicilian or something).  It tasted good but didn’t really help my queasiness.  I was still hungry (cause I ate too fast) and so I had a chocolate mint Jocolat which I’ve decided I don’t like.  Chocolate was good, mint – not so much.  And THEN, of course, I was too full.   *sigh*  I just couldn’t win.

Seven hours later after studying ASL with a friend, dinner rolled around.  And it was much better.

I had a whole wheat pita with tomato slices & 1/2 avocado, 1/2 avocado guacamole.  I had a bit of rice with some Indian spiced potato mash (I don’t remember what this was – it was what my family had for dinner and it was vegetarian).

Fruit was some blackberries w/a little bit of cooked brown sugar apple, and pineapple.

Eaten with a small salad w/olive oil, lemon juice, salt & pepper.

I got a trick from Oh She Glows (via her husband!) to dilute some orange juice with water.

And that was yesterday!

Today has been pretty regular; banana for breakfast, toast with tomatoes and avocado.  I did try to make some banana chocolate soft serve, but I added some peppermint extract and it was Too Much.  It made the whole thing gross and I just started over.  😦

I did some wandering around PetCo to kill some time before an interview this morning.  I had lots of fun looking at all the fish, birds, turtles, and hermit crabs.  Get a load of this guy!

Not the best picture, but this lizard looked prehistoric!  His eyes were strangely slitted, like a crocodile.  So bizarre and cool!

I anticipate another attempt at chocolate softserve tonight.  Without peppermint this time.

On a Date….with Mom

Yesterday I had the day off (unusual, I work on Sundays) so my mom and I went on a DATE.  😀

We ran errands, returned my brother’s tux from prom – he looked great!  Our plan was to find something for me to wear under my cap and gown for graduation.  But first, we had to get something to eat.

I’ve talked about Bloomingfoods before and how much I love it.  Well, we stopped at the east side today and decided to eat from the hot bar there.

I had steamed veggies, brown rice, and salad with peas, garbanzo beans, carrots, red onions, a hard boiled egg, and tau dressing.

What a great salad.  Gah, it was delicious.  I’m actually not hungry right now but I would love to go back and eat that again.  Which, speaking of….

We got some red curry tofu as well.  It could have a little bit more “curry” kick, but it was goooood.

With some of these…

I’ve seen these around the blog world, but this is my first time trying them.  We got the black pepper flavor.  They were very good, very filling, and a lot lighter and crispier than I expected.  I love the simple ingredients, as well.  I’ll definitely be buying again.

The other day I bought some whole wheat pita bread from Bloomingfoods that I really like.  And the nutritional profile is excellent!  190 calories, just a couple grams of fat, with almost no sugar and 8 grams of protein.  Yes, please.  I had some for lunch at work a few days ago with hummus, a carrot, and an avocado.

I tell you what, this really filled me up.  I only had one of the carrots, and I ate the kiwi later as a snack on my break outside.

*Sidenote: As a former nailbiter, I have to point out how fantastic my nail looks in this picture.  I have struggled with this habit for over a decade and I kicked it!!!  Just proof that if you really want to change something about yourself, you can do it.  You just have to really want it, work at it, and find ways to encourage your own success.  Whatever works!

Well, that concludes my update for today.  I’m trying to stay up on my blog, but this is finals week, my room is a mess, I have so much to do that I feel like I’m going crazy.  But it will soon be over, and I will say that I am enjoying about 85% of my day, every day.  Well, maybe 87%.  And that’s a good thing!  🙂

Pita and Guilty Puppies!

Let’s hear it for 2 great days in a row!  Maybe it’s that school is ending, but I’ve just had such a great time lately.

Last week my P303 Corrections professor (who is writing me a rec letter and loves me) asked me to come early to his 9:30 am class, the last “real” class of the semester, so I could administer the professor evaluations.  Of course, I woke up at 9:15 this morning.  Ugh. I freaked out.  What an awful start.  I bolted out of bed, left for class, then decided I was going to be too late for what he wanted me to do anyway.  So I turned around, went home and took a shower.  Then I went to class (walked in just as it ended) to say hi to Prof. Oliver, apologize, and tell him how much I’ve enjoyed the 2 classes I’ve taken with him.  He was totally cool with it, wished me luck and told me to keep in touch.  It was an awesome beginning.  I love that man.

Walking through campus with such beautiful weather (and a great hair day) made me so happy.  Something I heard a while ago: Regret is such a useless emotion. After feeling awful this morning about sleeping in, I decided “What’s done is done, just go to class and apologize.”  And it ended up not being a big deal.  So basically I decided to have a good day.  And now I have. Then I read an article in a magazine that “Happiness is a state of mind, not what happens to you in a day.” It’s so true!  Today could have been awful, but I decided to have a good day and be happy, and I am.  🙂

I got home (after awful traffic – another thing that couldn’t faze my mood!) and decided to get some Vitamin D.  Yeah!  I lay out for 25 minutes on our pool deck.  I definitely am not a “sunbather” and I am careful with my skin in the summer, but lately I’ve been feeling sun-deprived.  So I listened to my body and spent some time outside.

It’s not very pretty right now since we haven’t opened it yet for the season.  But it was so nice being in the sun.  And the Indiana woods behind – pretty, green, and shady.

Lunch was delicious and fast.

Pita w/red pepper hummus and red onion, 1/2 cucumber, stalk of celery, slice of tomato w/salt & pepper, 3 large strawberries.  Afterward I had a scoop of chocolate coconut snowballs.

Tonight I went to dinner with 3 of my best friends, all of whom I went to high school with.  We had a great time and ate at McAlister’s.  A new person was taking our orders, so it took forever for him to get them right.  I felt kind of bad for him, especially since I was asking for so many changes (no meat, no cheese, no bell pepper, on sourdough, etc.)  He actually got it wrong anyway, but I wasn’t going to send it back.  I like pita, anyway.

So I basically had the same thing for dinner that I had for lunch.  No biggie, I love my pita + hummus!  I didn’t want to dip the sandwich in the ranch they serve with it so I brought two tupperware containers with me – one with hummus, one with baba ganoush.  Delicious!

I got home to find my 11 year-old puppy had gotten into my trash.  I can always tell cause he slinks forward to greet me, and then has a guilty look on his face until he knows I’ve forgiven him.

Who couldn’t forgive that face?!?
